BEAVERCREEK – Soin Medical Center & Greene Memorial Hospital Executive Chef Jennifer Ball never thought her healthy twist on a sweet treat would make it all the way to a national competition, let alone come away as the best dessert. The national competition was sponsored by Premier, Inc.
The annual contest requires chefs to send a recipe meeting nutritional requirements set by Premier Inc.’s contest rules, including a per-serving cost maximum of $1.50, while being a healthy alternative to traditional desserts.
Chef Jenn sent Premier her recipe earlier this year and was notified prior to the national convention in Washington DC, that her S’mores Shooters made it to the final four desserts in the Premier Inc. Culinary Cup Award.
“I tried to think of something that everyone would like,” she said. “Since everyone likes chocolate and S’mores are such a favorite among all ages, I knew I couldn’t’ go wrong giving it a healthy twist.”
The 2-ounce cup held a marshmallow, chocolate brulee mousse made with non-dairy whip cream and yogurt. The ganache was made with almond milk.
Chef Jenn competed against 3 other finalists from hospitals in Maine, Ohio and California.
All four finalists’ desserts were presented to the attendees of the convention. Each person had to taste and choose the best by texting in their vote. S’mores Shooters took 1st place.
“I was totally surprised at the result,” the chef said. “It was such an honor to go to the event and represent our hospitals, only topped by coming back with the award.”
In addition this dessert is served in the hospital cafeterias and won an award at the Taste of Greene County earlier this year as well.
